I have a feeling the only reason you are seeing those is because his outlook is set to cache x amount of time. So they have all been pulled down and stored within his OST file.

I would not attempt to change this setting as I am fairly confident this is the only place you are going to have those meetings.

With that being said there may be a way to export those? But I have never done so. But based on everything you have said it sounds like you are going to need to re create these meetings online.
